Chocolate Crinkle Cookies

I love all cookies! Chris is not a huge cookie fan which results in me eating the whole batch of cookies by myself. I decided I needed to find a chocolate cookie recipe that would interest Chris. Luckily, I found this recipe! These cookies are so delicious and Chris even helped me finish off the batch :)

Ingredients

2 cups sugar
3/4 cup vegetable oil
3/4 cocoa
4 eggs
2 tsp vanilla
1/2 tsp salt
2 tsp baking powder
2 1/3 cupS flour
1 cup confectioner's sugar

Directions

1. In a bowl mix oil, cocoa, and sugar. 
2. Blend in one egg at a time until well mixed. Add vanilla
3. Stir in salt, baking powder and flour into oil mixture.
4. Chill several hours or overnight.
5. Preheat oven to 350 degrees F (180 degrees C).
6. Roll in sugar; shape into balls and place about 2 inches apart on greased baking sheet. Bake 10 to 12 minutes (do not overbake).

Graduation

I love living near a university because each year I get to share in the excitement of graduation. I love seeing the graduates walking around in their caps and gowns with a big smile on their faces. As a graduate myself, I can relate to those feelings of accomplishment and relief. What a great opportunity to be recognized for you hard work. I really enjoy this time of year!

Singing

I was able to spend the afternoon signing Disney songs to my baby girl! I have always been very self conscious about my singing voice. I was in my high school choir but I openly admit that I lip synced most of the time. Oh how a baby changes you; I now sing on a regular basis. I may be out of tune but my baby girl always lights up when I sing and dance with her. Who knew I would enjoy singing this much :)

Reasons to Smile

Why did I choose this as my blog name? 

I want to help myself and others to find a reason to smile each day! I hope to spend more time each day recognizing the beauty that is around me.
